Another great recipe for a meal on a budget! You can use Flank, Skirt, Flat Iron, Sirloin, Round (pounded) or Chuck Eye Steaks. We've even used our Kabob Cubes. This meal is not so common in the Missouri, but a refreshing delight in our kitchen!

This recipe is rich in flavor and fast to get on the table. We have used Sirloin Steak, Chuck Eye Steak and Ribeye. Our prefernece is the Chuck Eye Steak - an extension of the rib loin into the chuck - think of it as the value version of the Ribeye Steak - for it's bold beef flavor and single serving size cuts.
This dish goes great with homemade smashed potatoes, green beans, feta tomatoes or a caprese salad. We did find a simple creme brulee recipe for dessert!

Using Rocking Z Ranch Flank Steak this is a perfect recipe to mix flavors! We made our own whole wheat dough and cooked the pizza on a pizza stone. We also made sure to only sear the Flank Steak on the grill before adding it to the pizza. We paired our pizza with a homegrown mixed green salad - and Aunt Cherry's Fruit Cake Cookies for dessert!

Welcome the spring sunshine by firing up the grill! Using Rocking Z Ranch Sirloin Steak, this recipe is a Ranch favorite for its simplicity and smooth, fresh herb flavors.
In additional to our favorite herbs, we like to include freshly pressed garlic. Another tasty addition is balsamic vinegar or lime/lemon/orange juice!
We often pair our Sirloin Steak with Herbs with a seasonal salad - in the spring time we enjoy homegrown baby spinach and watercress, along with grilled asparagus.

Using Rocking Z Ranch Cubes Steak, this is a quick meal that makes great leftovers. In our house, we like to call this recipe "country" fried steak...and make it as healthy as possible.
We used skim milk instead of whole milk and cut down on the salt. We also didn't pound the Cube Steak so the beef book tender and finished with a medium doneness.
You don't have to make the gravy - I prefer to think the frying of the Cube Steak is enough bad for one meal - but the gravy is quite tasty. : )
we served our "country" fried steak over roasted cauliflower with delicious sides of sauteed sweet potatoes and fresh mixed green salad.

If the original recipe is for the Marlboro Man, We've made the Virginia Slims version and it was far and away our favorite Cube Steak recipe ever!
A few changes we made were doubling the onions (3 large), using 1 Tbsp of olive oil in place of butter and adding minced garlic to the Cube Steak. We served the Cube Steak and a spoonful of gravy on the onions as though it were a bed of pasta.

Ingredients:
4 Rocking Z Ranch Beef Hot Dogs
4 Scallions, bottoms trimmed
4 Whole wheat hot dog buns
4 Tbsp. p;ico de gallo
Guacamole
Pickled jalapenos
Directions:
1) Add the hot dogs and scallions to a heated grill. Cook until lightly charred on all sides, about 10 minutes.
2) Tuck the hot dogs into the buns and top with pico de gallo, guacamole, a grilled scallion and pickled jalapenos.

This is a great recipe for cooking on a budget! You can simply add your special touch each time you make it.
Ingredients:
4 cube steaks
4 potatoes, chopped
1 large green onion, chopped
4 celery stalks, chopped
5 carrots, chopped
3 Tbsp shortening (olive oil can also be used)
4 1/2 - 5 cups water
1 bay leaf
2 sprigs fresh thyme (can use 1/2 Tbsp dried thyme)
1/2 tsp rosemary
2-3 garlic cloves, unpeeled (or 1 1/2 Tbsp minced garlic)
salt and pepper
You can use a variety of vegetables including turnips, parsnips, green pepper, mushroom...
Directions:
1) Season cube steak with salt and pepper, both sides, while shortening (olive oil) is heating over medium/high heat in a Dutch oven. Brown cube steak on both sides (make sure to only sear the beef, the meat will continue cooking once the additional ingredients are added). Remove the steak and place on a plate to slightly cool; once cool to touch, cut the steak into 2 inch chunks.
2) Add flour to shortening and brown. Once brown, add cube steak, potatoes, onion, carrots, celery, (any additional vegetables), herbs and garlic.
3) Let stew simmer for about an hour and a half to an hour and forty five minutes. The cube steak should be easy to chew with the vegetables soft. Add salt and pepper to taste.
NOTE: Use a variety of vegetables!

Using Rocking Z Ranch Skirt or Flank Steak, this ia a delicious, healthy twist on the traditional Cheesesteak Sandwich. In 30 minutes, or less,this recipe can be on the table - making it a favorite for summer meals when we're short on time (we even use leftover Sirloin Steak which keeps the wonderful flavor and saves a few minutes of our time).
Don't be afraid to add more blue cheese. Also, use good bread! This recipe can easily be average with average bread - seek out fresh, local bread.

Ingredients:
2 Tbsp plain Greek-style yogurt
2 Tbsp olive oil mayonnaise (you can substitute 50% of the mayonnaise with the Greek yogurt to cut down on calories)
1/4 cup crumbled blue cheese
1lb. Skirt or Flank Steak
Salt and black pepper to taste
2 cups arugula
2 tomatoes, sliced
4 whole-wheat sandwich rolls
Caramelized onion*
Directions:
1) Combine the yogurt, mayonnaise and blue cheese. Set aside.
2) Heat the grill (you can use a cast-iron skillet or stovetop grill pan if a grill isn't an option). Season the Steak with salt and pepper and cook for 3 to 4 minutes per side for medium/rare, until the Steak is firm but still gives with gentle pressure. Allow to rest for 5 minutes before slicing into thin strips.
3) Divide the arugula and tomatoes among the rolls. Top with the Steak and caramelized onions and drizzle each sandwich with the blue cheese, mayonnaise and yogurt mixture.
Serves 4.
*Caramelized Onions:
Heat 1 Tbsp of butter in a large saucepan over medium-low heat. Add 4 medium red onions, sliced, and a few pinches of salt. Stir occasionally until the onions are translucent to a light caramel color - 20 to 30 minutes. Add 2 Tbsp balsamic vinegar and a few pinches of black pepper and cook an additional 3 to 5 minutes. Makes about 2 cups (and tastes just as great the next day).

A wonderful recipe for those cool winter days!
Ingredients:
3 lb. Rocking Z Ranch Chuck Roast, trimmed and cut into 1/2 inch cubes
Salt and ground pepper
2 Tbsp. vegetable oil
2 medium onions, minced
2 medium carrots, peeled adn chopped fine
1/2 cup dry red wine
2 (14.5 oz) cans diced tomatoes
1 tsp. dried thyme
4 C low-sodium beef broth
4 C low-sodium chicken broth
2/3 C pearl barley
1/4 C minced fresh parsley leaves
Directions:
1) Dry the beef with paper towels and season generously with salt and pepper. Heat 2 tsp. of the oil in a 12-inch skillet over medium-high heat. Sear the beef on all sides and transfer to a slow cooker.
2) Return the skillet to medium-high heat and heat the remaining 2 tsp of iol. Add the onions, carrots and 1/4 tsp salt; cook until softened. Stir in the wine, scrapping the brown bits off the skilet bottom, and cook until almost dry. Add the tomoatoes and thyme; bring to a boil before pouring into the slow cooker.
3)Stir the beef broth, chicken broth and barley into the slow cooker. Cover and cook until the beef is tender -7-8 hrs on low or 5-6 hrs on high. Before serving stir in the parsley and season to taste wth salt and pepper.
NOTE: The barley, cooked over a long perios of time, adds body as well a nutty flavor to the soup. You can replace the parsley with 2 Tbsp. miced fresh dill.
FYI: A 3 lb. Chuck Roast will yield about 2 1/2 pounds of beef.

Using Rocking Z Ranch Skirt Steak, this is a tasty recipe for any weather!
A few tips when cooking:
-Lightly sear the Skirt Steak on the first round. Whe you reheat the beef, aim for a medium/rare doneness - it'll rest to medium.
-Remeber that Skirt Steak is a naturally think steak and can easily be overcooked.
We enjoyed our Skirt Steak serves over Italian garlic bread, a fresh mixed grren salad and whole wheat chocolate chip cookies!

Beef marinades generally follow the same theme: acid, oil and flavoring. Most cuts of beef, including roasts, benefit from a marinade but value steaks (flank, skirt, cube, sirloin tip, chuck, round, arm) will see the most benefit from a tenderizing marinade. Olive oil tends to be the most common oil used and your acid can come from a variety of different sources including: vinegar, coffee, soy sauce, lime/lemon/orange/grapefruit juice, and wine.
Following the theme of acid, oil and flavoring, the possibilities are endless for marinades. Below is a sample marinade with a few examples of flavors that can be added.
Simple Beef Marinade:
1/2 cup Vinegar
1/2 cup Salad Dressing or Olive Oil
1/2 tsp Sea Salt
1/2 tsp Ground Pepper
2 tsp Worcestershire Sauce
